Profile: You can delete a profile when the game starts or from outside the game. To delete a profile, select the file that you want to delete on the Load profile menu option, and then select the option to delete the saved profile.

Then select gamer profiles and scroll for the one you want to delete and hit delete!
To change the age you can't just wait for it to expire, don't renew it, change your age, and then renew it!
